No coating at all, which is the whole idea
Every non stick pan is on a countdown. The coating is the part that wears, and once it goes the pan is finished. This one has nothing on it. It is iron, and it becomes non stick the way iron always has, by building a layer of polymerised oil that gets better the more you cook rather than worse.
Hand hammered, and you can feel it
The whole bowl is beaten rather than pressed smooth, so the inside carries an all over pattern of shallow dimples. That is not decoration. The facets break up the contact between food and metal and give the seasoning layer something to hold onto. The wooden handle is set into a steel ferrule and fixed with three rivets through the wall, which is the join that usually fails on cheaper pans and the reason this one has a hanging loop rather than a screw thread.
Light for an iron pan
The usual objection to iron is the weight, and it is a fair one when a cast iron skillet needs two hands. This is pressed rather than cast, so the wall is thin and the whole thing stays liftable. You can toss what is in it, which on a wok is not a party trick but the actual cooking method.
Why you will love it
- No chemical coating - nothing to scratch, flake or wear out.
- Seasons over time - the surface improves with use instead of degrading.
- Hand hammered bowl - dimpled facets that hold the seasoning layer.
- Takes real heat - iron handles the temperature a stir fry actually needs.
- Light enough to toss - pressed iron rather than cast, so you can lift it one handed.
- Flat 20cm base - it sits properly on a domestic hob rather than rocking.
- Riveted wooden handle - stays cool, and hangs from the loop when it is not in use.

Care
Season it before first use. Wash off the factory oil, dry it on the hob, then wipe a very thin film of a high smoke point oil over the inside and heat until it stops smoking. Repeat two or three times and you have a working surface. After that, never soak it, never put it in the dishwasher, and dry it on the heat rather than in the rack. A little rust is not a disaster, it scours off and you re-season. Treated properly this outlives every coated pan you will ever buy.
