The Japanese pan that does most of the cooking
A yukihira is the pan Japanese kitchens reach for by default, and once you own one it is obvious why. Light enough to lift one handed, shallow enough to see what is happening, with a spout on each side so you can pour left or right without hunting for the right angle. Stock, sauces, noodles, a single portion of anything.
Why it is dimpled
The hammered finish is not decoration. Beating the surface increases its area, so the pan takes up heat faster and spreads it further up the sides instead of concentrating it in a disc at the bottom. It is the reason a thin, light pan at under 400g can still hold a steady simmer without scorching.
Why you will love it
- Hammered steel body - heats fast and evenly for its weight.
- Twin pouring lips - pour from either side, cleanly.
- Solid wood handle - stays cool on the hob and hangs from its own hook.
- Light in the hand - 391g, easy to lift and tip when full.
- Glass lid included - watch the pan without lifting anything.
- Works on induction - and on gas, electric and ceramic.
The size to own if you only own one
At 18cm across and 7.5cm deep this is the middle of the yukihira range and the one that earns its hook. Big enough for two portions of noodles or a pint of stock, small enough that a single egg or a splash of sauce does not disappear into it. The handle is 15.5cm, a little shorter than the pan is wide, which is what keeps it balanced when you lift it full.

Care
Wash the pan by hand and dry it rather than leaving it to drain, since a wooden handle and a dishwasher are a short term relationship. The glass lid is the most fragile part of the set, so set it down on a cloth rather than a hard worktop and do not put it under cold water while it is still hot. Treated sensibly the pan itself will outlast several coated ones.
